Traditional Sunday Roast with Beef, Potatoes, Pigs in Blankets, and Yorkshire Pudding

The quintessential Sunday Roast is a beloved British tradition, bringing together hearty, flavorful elements like succulent roast beef, crispy potatoes, pigs in blankets (sausages wrapped in bacon), and the ever-famous Yorkshire pudding.
Perfect for a family gathering, this classic roast offers a comforting and satisfying meal that’s full of rich textures and flavors.
Ingredients
For the Roast Beef:
3 lb beef roast (such as ribeye or sirloin)
2 tbsp olive oil
2 garlic cloves, minced
1 tbsp fresh rosemary, chopped
Salt and black pepper, to taste
For the Roast Potatoes:
2 lbs potatoes, peeled and quartered
3 tbsp olive oil or beef dripping
Salt, to taste
For the Pigs in Blankets:
8 pork sausages
8 slices bacon
For the Yorkshire Pudding:
1 cup all-purpose flour
1 cup milk
2 eggs
Pinch of salt
2 tbsp beef drippings or vegetable oil
Instructions
Step 1: Prepare the Roast Beef
Preheat your oven to 375°F (190°C). Rub the beef roast with olive oil, garlic, rosemary, salt, and pepper. Place it on a roasting tray and roast in the oven for about 1 1/2 to 2 hours, depending on your desired level of doneness (use a meat thermometer for accuracy: 130°F for medium-rare). Let the beef rest for 15 minutes before carving.
Step 2: Prepare the Roast Potatoes
While the beef is roasting, parboil the potatoes in salted water for 10 minutes. Drain and let them steam dry. In a roasting tray, heat olive oil or beef drippings, then add the potatoes. Roast at 400°F (200°C) for 40-50 minutes, turning halfway through, until crispy and golden.
Step 3: Make the Pigs in Blankets
Wrap each pork sausage with a slice of bacon. Place them on a baking sheet and roast in the oven at 375°F (190°C) for about 25-30 minutes until the bacon is crispy and the sausages are cooked through.
Step 4: Prepare the Yorkshire Puddings
Increase the oven temperature to 425°F (220°C). In a bowl, whisk together flour, milk, eggs, and salt until smooth. Place a muffin tin with a little beef drippings or oil in each cup into the oven to heat. Once hot, pour the batter into the tin and bake for 20-25 minutes until the puddings are golden and puffed up.
Step 5: Serve the Sunday Roast
Slice the roast beef and serve it alongside the crispy roast potatoes, pigs in blankets, and Yorkshire puddings. Add a side of steamed vegetables or gravy if desired.
Tips
For extra flavor, try adding whole garlic cloves and rosemary sprigs to the roasting tray with the beef.
