This Spanish Rice Soup is an easy one-pot meal that packs bold flavors from simple ingredients. With only 7 basic items and 30 minutes of cooking time, this budget-friendly soup is filling, flavorful, and perfect for busy weeknights.
The combination of rice, tomatoes, and spices creates a savory broth that is both satisfying and nutritious.
Ingredients
1 cup uncooked white rice
1 can (14.5 oz) diced tomatoes, undrained
4 cups chicken or vegetable broth
1 small onion, chopped
2 cloves garlic, minced
1 tsp ground cumin
1 tbsp olive oil
Salt and pepper, to taste
(Optional) Chopped cilantro for garnish
(Optional) Lime wedges for serving
Instructions
Step 1
In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing for about 2-3 minutes until softened and fragrant.
Step 2
Stir in the diced tomatoes (with their juice), broth, and ground cumin. Bring the mixture to a boil.
Step 3
Add the uncooked rice to the pot, stirring well. Reduce the heat to low and let the soup simmer for 20-25 minutes, or until the rice is tender and the soup has thickened slightly. Stir occasionally to prevent the rice from sticking to the bottom.
Step 4
Season the soup with salt and black pepper to taste. For extra flavor, garnish with freshly chopped cilantro and serve with lime wedges.
Tips
For a heartier meal, toss in shredded chicken or black beans.
Want a little kick? Add 1/4 tsp of chili powder or a pinch of red pepper flakes for some heat.
