If you’re in the mood for a bright and zesty dish that won’t break the bank, this Lemon Caper Pasta is the perfect choice!
With just 6 ingredients and ready in 20 minutes, this pasta dish combines the tangy flavors of lemon and capers for a refreshing meal.
It's a delightful option for lunch or dinner that’s both simple and delicious.
Ingredients
8 ounces spaghetti or any pasta of your choice
1/4 cup olive oil
2 cloves garlic, minced
1 lemon (zested and juiced)
2 tbsp capers, drained
Salt and pepper, to taste
(Optional) Fresh parsley, chopped, for garnish
(Optional) Grated Parmesan cheese for serving
Instructions
Step 1
Cook the spaghetti according to package instructions until al dente. Reserve about 1/2 cup of the pasta water, then drain and set aside.
Step 2
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant but not browned.
Step 3
Stir in the lemon zest, lemon juice, and capers, cooking for another 1-2 minutes. If the sauce is too thick, add a bit of the reserved pasta water to loosen it.
Step 4
Add the cooked pasta to the skillet and toss until well combined. Season with salt and pepper to taste.
Step 5
(Optional) Garnish with freshly chopped parsley and serve with grated Parmesan cheese if desired.
Tips
For a protein boost, add grilled chicken or shrimp.
If you like heat, sprinkle in some red pepper flakes for an extra kick.
