This Broccoli Salad is a fantastic way to incorporate veggies into your meal while staying on a budget.
With just 6 ingredients and 15 minutes of prep time, this salad combines crunchy broccoli with a creamy dressing, making it a delicious complement to any main course.
Perfect for potlucks or as a quick side for weeknight dinners.
Ingredients
4 cups fresh broccoli florets
1/2 cup shredded carrots
1/2 cup raisins or dried cranberries
1/4 cup chopped red onion
1/3 cup mayonnaise
1 tbsp apple cider vinegar
Salt and pepper, to taste
(Optional) Sunflower seeds or chopped nuts for added crunch
Instructions
Step 1
In a large bowl, combine the broccoli florets, shredded carrots, raisins (or dried cranberries), and chopped red onion.
Step 2
In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, salt, and pepper until well combined.
Step 3
Pour the dressing over the broccoli mixture and toss until all the ingredients are well coated.
Step 4
(Optional) For added crunch, sprinkle with sunflower seeds or chopped nuts before serving. Chill in the refrigerator for 15 minutes to let the flavors meld, if desired.
Tips
To make it lighter, you can substitute Greek yogurt for half of the mayonnaise.
